Sweet Potato Souffle

Sweet Potato Souffle

Ingredients:
3 - 15oz cans yams
1/2 cup white sugar
1/3 cup butter, softened
2 eggs, beaten
1 teaspoon vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/2 cup milk
1 cup flaked coconut
1/3 cup all-purpose flour
1 cup packed brown sugar
1 cup chopped walnuts
1/3 cup melted butter


Directions:
1.  Preheat oven to 350 degrees. Spray 2-quart baking dish with cooking spray.
2.  In a large boil, combine the yams, sugar, butter, eggs, vanilla, spices and milk. Spoon into a baking dish.
3.  In a separate bowl, combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.
4.  Bake at 350 degrees for 30 to 35 minutes.
